Preparing the Cucumber Dill Sauce

    Mix the Sauce

    In a bowl, combine the Greek yogurt, grated cucumber, chopped dill, lemon juice, minced garlic, salt, and black pepper. Mix well until smooth. Set aside in the refrigerator to chill.

Preparing the Salmon

    Season the Salmon

    In a small bowl, mix together paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper. Rub this spice mixture over the salmon fillets.

    Cook the Salmon

    Heat olive oil in a skillet over medium-high heat. Once hot, add the salmon fillets skin-side down. Cook for 4-5 minutes, then flip and cook for another 3-4 minutes until the salmon is cooked through and has a blackened crust. Remove from heat.

Preparing the Mashed Potatoes

    Cook the Potatoes

    In a large pot, bring water to a boil. Add the peeled and cubed potatoes and cook until tender, about 15-20 minutes. Drain.

    Mash the Potatoes

    Return the drained potatoes to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

Preparing the Seasonal Veggies

    In a skillet, heat olive oil over medium heat. Add the seasonal vegetables. Season with salt and black pepper. Sauté for about 5-7 minutes until tender but still crisp.
