Method
Prepare Tortilla Chips

Cut Tortillas
Stack the corn tortillas and cut them into triangles to form chips.

Heat Oil
In a large skillet, heat the vegetable oil over medium-high heat until it shimmers.

Fry Chips
Add the tortilla triangles in batches to the hot oil and fry until they are golden brown and crispy, about 2-3 minutes. Remove and drain on paper towels.
Assemble Nachos

Layer Chips
On a large serving platter, create a base layer with half of the fried tortilla chips.

Add Toppings
Sprinkle half of the Vermont cheddar cheese over the chips, followed by half of the pulled pork, half of the pico de gallo, and half of the BBQ sauce.

Repeat Layers
Add another layer of the remaining tortilla chips, followed by the remaining Vermont cheddar cheese, pulled pork, pico de gallo, and BBQ sauce.
Serve

Optionally, drizzle more BBQ sauce on top and serve immediately while hot.
