Method

Main Dish

  1. 1

    Prepare the Haddock

Preheat your oven to 375°F (190°C). Rinse the haddock fillets under cold water and pat them dry with paper towels. Season both sides of the fillets with salt and black pepper. Place them in a greased baking dish.

  2. 2

    Add Lemon Juice and Butter

Drizzle lemon juice over the haddock fillets. Cut the butter into small pieces and distribute them evenly over the fish.

Topping

  1. 3

    Prepare the Cracker Topping

In a medium bowl, crush the Ritz crackers into fine crumbs. Add dried parsley, garlic powder, and paprika to the crumbs and mix well.

  2. 4

    Top the Haddock

Sprinkle the cracker mixture evenly over the seasoned haddock fillets in the baking dish.

Mashed Potatoes

  1. 5

    Cook the Potatoes

Peel and chop the potatoes into chunks. Place them in a large pot and cover with water. Add a pinch of salt and bring to a boil. Cook until the potatoes are fork-tender, about 15-20 minutes.

  2. 6

    Mash the Potatoes

Drain the potatoes and return them to the pot. Add milk, butter, salt, and black pepper. Mash until smooth and creamy. Adjust seasoning to taste.

Vegetable

  1. 7

    Prepare the Green Beans

Trim the ends off the green beans and rinse them under cold water. In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for 1 minute.

  2. 8

    Cook the Green Beans

Add the green beans to the skillet and season with salt. Sauté for 5-7 minutes until they are tender but still crisp.

Baking

  1. 9

    Bake the Haddock

Place the baking dish with the topped haddock in the preheated oven. Bake for 20-25 minutes, or until the fish flakes easily with a fork.
