Preparing the Filling

    Cook the Rice

    In a medium pot, bring 3 cups of water to a boil. Add 1 cup of rice and a pinch of salt. Reduce heat to low, cover, and simmer for 18-20 minutes until water is absorbed and rice is tender. Fluff with a fork and set aside.

    Prepare the Beans

    Rinse and drain the black beans. Heat them in a small saucepan over medium heat until warmed through. Mash lightly with a fork if desired and set aside.

    Chop the Vegetables

    Finely chop the cilantro and onion. Set aside.

    Cook the Meat

    If using raw meat, cook your choice of chicken, beef, carnitas, or shrimp in a skillet over medium-high heat until fully cooked. Shred or chop as necessary and set aside.

Assembling the Burritos

    Warm the Tortillas

    Heat each flour tortilla on a non-stick skillet for about 30 seconds on each side until warm and pliable.

    Fill the Tortillas

    Place a warm tortilla on a flat surface. In the center, layer 1/2 cup of cooked rice, 1/4 cup of black beans, 1/4 cup of the cooked meat, a sprinkle of chopped cilantro and onions.

    Roll the Burrito

    Fold the sides of the tortilla over the filling, then roll from the bottom up to create a tight burrito. Repeat for remaining tortillas.

Topping and Serving

    Top with Sauce

    Place the rolled burritos in a baking dish. Pour the red or green sauce over the top, ensuring they are well covered.

    Add Cheese and Bake

    Sprinkle the jack cheese over the sauce-covered burritos. Preheat the oven to 350°F (175°C) and bake for 15-20 minutes, or until the cheese is melted and bubbly.

    Garnish and Serve

    Remove from the oven and let cool slightly. Top with sour cream, sesame seeds, and sliced radishes before serving.
