Method

Preparation of Dough

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Stir well to ensure that the dry ingredients are evenly mixed.

  2. 2

    Add Fat

Add the lard or vegetable shortening to the dry ingredients. Using your fingers or a pastry cutter, mix until the mixture resembles coarse crumbs.

  3. 3

    Add Water

Gradually add the water to the mixture, stirring with a fork until a dough forms. You may need to adjust the amount of water slightly depending on the humidity and flour type.

  4. 4

    Knead the Dough

Transfer the dough to a floured surface and knead for about 3-5 minutes until it is smooth and elastic. Form the dough into a ball.

  5. 5

    Rest the Dough

Cover the dough with a damp cloth or plastic wrap and let it rest for at least 20-30 minutes. This allows the gluten to relax, making it easier to roll out.

Cooking Tortillas

  1. 6

    Divide the Dough

After resting, divide the dough into 8 equal pieces. Roll each piece into a ball and flatten slightly with your hands.

  2. 7

    Roll Out the Tortillas

Using a rolling pin, roll each ball out on a lightly floured surface into a thin circle, about 6-8 inches in diameter.

  3. 8

    Cook the Tortillas

Heat a dry skillet or griddle over medium-high heat. Place the rolled-out tortilla in the skillet and cook for about 30 seconds on each side, or until lightly browned and cooked through.

  4. 9

    Keep Warm

As you cook each tortilla, place them in a clean kitchen towel to keep them warm and soft until you are ready to serve.
