Prepare the Vegetables
Wash and chop the fresh tomatoes into quarters. Chop the onion and mince the garlic cloves.

Sauté Onions and Garlic
In a large pot, heat a tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for another minute until fragrant.

Add Tomatoes and Broth
Add the chopped tomatoes to the pot along with the vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes, until the tomatoes are soft.

Blend the Soup
Using an immersion blender, carefully blend the soup until smooth. Alternatively, you can transfer the soup in batches to a countertop blender, blending until smooth, and then returning it to the pot.

Add Cream and Seasoning
Stir in the heavy cream, fresh basil leaves, salt, and pepper. Allow the soup to simmer for an additional 5 minutes to heat through and blend the flavors.

Ladle the hot soup into bowls. Top each serving with shredded jack cheese and a sprinkle of fresh basil leaves for garnish.
