Prepare the Dough
In a large bowl, combine corn flour, salt, and water. Mix until a soft dough forms.

Form the Tortillas
Divide the dough into 6 equal pieces. Roll each piece into a ball, then flatten each ball using a tortilla press or rolling pin to form thin tortillas.

Cook the Tortillas
Heat a skillet over medium-high heat. Cook each tortilla for about 1 minute on each side until slightly charred and cooked through. Keep warm in a clean towel.

Cook the Shrimp
Heat a skillet over medium heat. Add the marinated shrimp and cook for 3-4 minutes, stirring occasionally, until the shrimp are pink and cooked through.

Assemble the Tacos
Take a warm tortilla, place a portion of cooked shrimp in the center. Top with shredded jack cheese, cabbage, avocado slices, and drizzle with chipotle aioli.
