Prepare Cheese Mixture
In a large mixing bowl, combine 2 cups of shredded Jack cheese, 1.5 cups of shredded Mozzarella cheese, and 2 cups of shredded Oaxaca cheese. Mix well and set aside.

Cook Chorizo
In a skillet over medium heat, cook 1 cup of chorizo, breaking it apart with a spatula until it is fully cooked and crispy, about 5-7 minutes. Drain excess fat and set aside.

Assembly and Baking

Combine and Bake
Preheat your oven to 400°F (200°C). In a suitable baking dish, layer the cheese mixture evenly. Top with the cooked chorizo. Place the dish in the oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.

Garnish and Serve
Once baked, remove from the oven and top with the grilled chili peppers. Optionally, sprinkle with fresh chopped cilantro. Serve immediately with lime wedges on the side.
