Soup Preparation

    Prepare the Pork

    In a large pot, combine the pork shoulder, onion (cut in half), garlic cloves (whole), bay leaves, oregano, salt, and water. Bring to a boil over high heat.

    Simmer the Soup

    Once boiling, reduce heat to low and cover the pot. Let it simmer for about 1.5 to 2 hours, or until the pork is tender and easily shreds.

    Add Hominy

    Remove the pork from the pot and set it aside to cool. Strain the broth to remove the solids. Return the strained broth to the pot and add the hominy. Cook for another 30 minutes.

    Shred the Pork

    While the hominy cooks, shred the cooled pork shoulder into bite-sized pieces. Return the shredded pork to the pot with the hominy.

    Final Seasoning

    Taste the soup and adjust seasoning with additional salt if needed. Let it simmer for another 10-15 minutes.

Serving Preparation

    Prepare Garnishes

    While the soup is simmering, prepare your garnishes. Thinly slice the radishes, chop the fresh cilantro, and cut the limes into wedges.

    Serve

    Ladle the pozole into bowls and serve hot, allowing each guest to add the garnishes of shredded cabbage, sliced radishes, cilantro, and lime juice to taste.
