    Prepare the Potatoes

    Wash and peel the potatoes. Cut them into small cubes.

    Cook the Potatoes

    In a skillet, heat the olive oil over medium heat. Add the cubed potatoes, season with salt and pepper, and cook for about 15 minutes until golden brown and tender, stirring occasionally.

    Cook the Meat

    In a separate skillet, cook your choice of meat (chorizo, ham, bacon, sausage, or chicken) over medium heat until fully cooked. For chorizo, about 5-7 minutes should suffice. Drain excess fat if needed.

    Whisk the Eggs

    In a bowl, crack the eggs and whisk them together. Season with a pinch of salt and pepper.

Cooking

    Scramble the Eggs

    Pour the whisked eggs into the skillet with the cooked meat. Stir gently, cooking until the eggs are scrambled and cooked to your liking, approximately 3-5 minutes.

    Combine Ingredients

    Once the eggs are cooked, add the cooked potatoes and cheddar cheese to the skillet. Stir everything together until the cheese is melted and well combined.

Assembly

    Assemble the Burritos

    Warm the flour tortillas in a separate skillet or in the microwave. Spoon the egg, meat, potato, and cheese mixture onto the center of each tortilla. Fold in the sides and roll it up tightly.

    Serve the breakfast burritos warm. Optional: Serve with salsa or hot sauce on the side.
