Birria Preparation

Prepare the Chiles
Remove the stems and seeds from the dried guajillo and ancho chiles. Place the chiles in a saucepan with enough water to cover them. Bring to a boil, then reduce heat and simmer for about 15 minutes until softened. Drain and set aside.

Blend the Sauce
In a blender, combine the softened chiles, garlic cloves, onion, cumin, oregano, bay leaves, salt, and black pepper. Add about 1 cup of beef broth and blend until smooth.

Cook the Beef
In a large pot or Dutch oven, heat some oil over medium-high heat. Sear the beef chuck roast on all sides until browned. Remove the beef and set aside.

Simmer
In the same pot, pour in the blended sauce and cook for a few minutes until fragrant. Add the remaining beef broth and the seared beef. Bring to a boil, then reduce the heat to low, cover, and simmer for about 3 hours or until the beef is tender and easily shredded.

Cook the Noodles
In a separate pot, bring water to a boil. Add the ramen noodles and cook according to package instructions, usually around 3-4 minutes. Drain and set aside.
