Method

Birria Preparation

    Prepare the Meat

    In a large pot, add the beef chuck roast and cover it with water. Bring to a boil, then reduce to a simmer.

    Make the Sauce

    Soak the dried guajillo and ancho peppers in hot water for about 15 minutes until soft. Blend with garlic, onion, cumin, oregano, salt, and black pepper until smooth.

    Combine and Cook

    Add the blended sauce, bay leaves, and beef broth to the pot with the beef. Simmer for about 3 hours, or until the meat is tender and easily shredded.

Rice Preparation

    Cook the Rice

    In a saucepan, combine the long-grain rice, water, and salt. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until the rice is fluffy.

Beans Preparation

    Heat the Beans

    In a small pot, heat the canned black beans over medium heat. Stir in cumin, garlic powder, and salt. Cook for about 5-7 minutes until warmed through.

Guacamole Preparation

    Make the Guacamole

    In a bowl, mash the ripe avocados. Stir in lime juice, salt, diced tomatoes, chopped cilantro, and diced onion until well combined.

Assembly

    Plate the Dish

    On a large platter, arrange the tender beef birria, rice, black beans, and guacamole. Sprinkle chopped cilantro and diced onions on top.

    Serve with Tortillas

    Warm the corn or flour tortillas and serve them alongside the platter for wrapping the birria.
