Preparation of Beef Birria

Prepare the Chiles
Remove the stems and seeds from the guajillo and ancho chiles. Place them in a bowl and cover with hot water. Let them soak for about 15-20 minutes until they soften.

Cook the Beef
In a large pot, heat a tablespoon of oil over medium heat. Add the beef chuck roast and sear on all sides until browned. Pour in the blended marinade and beef broth, adding bay leaves. Bring to a simmer.

Assembling the Nachos

Preheat Oven
Preheat your oven to 350°F (175°C).

Layer Tortilla Chips
Spread the tortilla chips evenly on a large baking sheet.

Add Beef
Evenly distribute the shredded beef birria over the tortilla chips.

Top with Cheese
Sprinkle jack cheese generously over the beef.

Melt Cheese
Place the baking sheet in the preheated oven and bake for about 10-15 minutes, or until the cheese is melted and bubbly.

Remove the nachos from the oven and top with jalapeños, guacamole, cotija cheese, diced onion, and fresh cilantro.
