Swordfish with Brown Butter, White Acre Peas, and Salsa Verde

Preparation and Cooking Instructions

    Prepare the Salsa Verde

    In a small bowl, mix together olive oil, minced garlic, lemon juice, chopped parsley, and chopped capers. Season with salt and black pepper to taste. Set aside.

    Cook the White Acre Peas

    In a saucepan, bring water to a boil. Add white acre peas and simmer for about 5-7 minutes until tender. Drain and set aside.

    Brown the Butter

    In a skillet over medium heat, melt the butter. Continue cooking until it turns golden brown and has a nutty aroma, about 5 minutes. Be careful not to burn it.

    Cook the Swordfish

    In another skillet, heat a little olive oil over medium-high heat. Season swordfish steaks with salt and pepper. Cook the steaks for about 4-5 minutes on each side or until they are cooked through and have a nice sear.

    Serve

    Plate the swordfish steaks and drizzle the brown butter over them. Serve alongside the cooked white acre peas and spoon the salsa verde over the top.
