    Prepare the Lamb

    Preheat your oven to 200°C (400°F). Rub the lamb chops with olive oil, minced garlic, chopped rosemary, salt, and black pepper. Let them marinate for at least 30 minutes.

    Cook the Lamb

    Heat a skillet over medium-high heat. Sear the lamb chops for 3-4 minutes on each side until browned. Transfer to the oven and roast for 10-15 minutes for medium-rare.

Brussels Sprouts

    Prepare Brussels Sprouts

    Trim and halve the Brussels sprouts. Toss them with olive oil, salt, and pepper.

    Roast Brussels Sprouts

    Spread them on a baking sheet and roast in the oven at 200°C (400°F) for 20-25 minutes, until crispy and caramelized.

Turnip Puree

    Cook Turnips

    Peel and chop the turnips into chunks. Boil in salted water until tender, about 15-20 minutes.

    Puree Turnips

    Drain and blend the turnips with butter, heavy cream, and salt until smooth. Adjust seasoning to taste.

Lamb Jus

    Prepare the Jus

    In a pot, add the lamb bones, chopped onion, carrot, celery, red wine, and water. Bring to a boil and then simmer for 2-3 hours.

    Strain and Reduce

    Strain the broth and reduce it on medium heat until it thickens. Season with salt.
