Prepare the Sweet Potatoes
Preheat the oven to 400°F (200°C). Peel and dice the sweet potatoes into small cubes. Toss them with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 25-30 minutes or until tender and golden brown.

Prepare the Squash
While the sweet potatoes are roasting, slice the la estrella squash into thin rounds. In a separate skillet, heat 1 tablespoon of olive oil over medium heat and add the squash. Sauté for 5-7 minutes until tender. Season with salt and pepper.

Make the Onion Agrodolce
Thinly slice the onion. In a small saucepan, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and cook until softened. Add the brown sugar and red wine vinegar, stirring until the sugar dissolves. Let it simmer for about 10 minutes until slightly thickened.

Cook the Halibut
In a large skillet, melt the butter over medium heat until it starts to brown. Season the halibut fillets with salt and pepper. Add the halibut to the skillet and cook for about 4-5 minutes on each side or until golden brown and cooked through.

Serve
On a plate, arrange the roasted sweet potatoes, sautéed squash, and top with the halibut. Drizzle the onion agrodolce and brown butter vinaigrette over the top. Garnish with fresh herbs.
