Method
Salad Preparation
Rinse Lettuce
Begin by rinsing the Boston Bibb lettuce under cold water to remove any dirt or grit. Shake off excess water or use a salad spinner to dry the leaves.
Prepare Lettuce Leaves
Carefully peel away the leaves from the core of the lettuce. Discard any damaged or wilted leaves. Tear the remaining leaves into bite-sized pieces and place them in a large salad bowl.
Dijon Vinaigrette Preparation
Mix Mustard and Vinegar
In a small bowl, combine the Dijon mustard and red wine vinegar. Whisk together until well blended.
Add Olive Oil
Slowly drizzle in the extra virgin olive oil while whisking continuously to emulsify the dressing.
Season the Dressing
Stir in the honey, then season the vinaigrette with salt and black pepper to taste. Adjust the seasoning as necessary.
Combine and Serve
Dress the Salad
Pour the Dijon vinaigrette over the prepared Boston Bibb lettuce leaves in the salad bowl. Toss gently to ensure all the leaves are evenly coated with the dressing.
Serve the Salad
Serve immediately as a fresh side salad or appetizer.
