Preheat the oven to 425°F (220°C). Peel the beets and cut them into thin matchstick shapes.

In a large bowl, toss the beet matchsticks with olive oil, sea salt, and black pepper until evenly coated. Spread the beets in a single layer on a baking sheet lined with parchment paper.

Bake the beets in the preheated oven for 25-30 minutes, or until they are crispy and tender, turning them halfway through cooking.

Chevre Mousse

Prepare the Chevre Mousse

In a medium bowl, combine the chevre, heavy cream, honey, and lemon juice. Using a hand mixer or whisk, blend until smooth and creamy.

Finely chop the fresh mint leaves and gently fold them into the chevre mousse until evenly distributed.
