    Pound the pork loin pieces to about 1/4 inch thick using a meat mallet. This helps to tenderize the meat.

    Season both sides of the pork with salt and black pepper.

    Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with bread crumbs.

    Dredge each pork piece in flour, shaking off excess. Dip into the beaten eggs, then coat with bread crumbs, pressing gently to adhere.

    In a large skillet, heat the vegetable oil or clarified butter over medium-high heat until hot.
