Prepare the Base
In a large pot or Dutch oven, cook the diced bacon over medium heat until crispy. Remove the bacon and set aside, leaving the rendered fat in the pot.
Brown the Beef
In the same pot, add the beef cubes and brown them on all sides. This should take about 5-7 minutes.
Add Remaining Ingredients
Stir in the cubed potatoes, cooked bacon, paprika, salt, black pepper, red pepper flakes, bay leaves, Dragon's Breath Dark Heff beer, and beef broth. Bring to a boil.
Simmer the Soup
Reduce the heat to low and cover the pot. Let it simmer for about 1.5 to 2 hours, or until the beef is tender and the flavors have melded.
Finish and Serve
Remove the bay leaves before serving. Garnish with fresh parsley and enjoy your hearty Udo's Dragon Soup!
