1. Prepare the Base
In a large pot or Dutch oven, cook the diced bacon over medium heat until crispy. Remove the bacon and set aside, leaving the rendered fat in the pot.
2. Brown the Beef
In the same pot, add the beef cubes and brown them on all sides. This should take about 5-7 minutes.
3. Sauté the Vegetables
Add the chopped onion, garlic, bell peppers, and carrots to the pot. Sauté for about 5 minutes until the vegetables are softened.
4. Add Remaining Ingredients

5. Simmer the Soup
Reduce the heat to low and cover the pot. Let it simmer for about 1.5 to 2 hours, or until the beef is tender and the flavors have melded.
