    Prepare the Schnitzel

    Season the pork schnitzel with salt and pepper on both sides. Dredge each piece in flour, dip into beaten eggs, then coat with breadcrumbs. Set aside.

    Cook the Schnitzel

    Heat olive oil in a large skillet over medium-high heat. Add the schnitzels and cook for about 4-5 minutes on each side until golden brown. Remove and keep warm.

    Make the Mushroom Gravy

    In the same skillet, add butter and sauté the chopped onion until translucent. Add the sliced mushrooms and garlic, cooking until mushrooms are browned.

    Finish the Gravy

    Pour in the chicken broth and let it simmer for 5 minutes. Stir in the heavy cream, and cook until the sauce thickens, about 3-4 minutes.

    Serve

    Place the schnitzel on plates, generously spoon the mushroom gravy over the top, and serve with German pickles on the side.
