    Prepare the chicken

    Place the chicken breasts between two sheets of plastic wrap and pound them to about 1/4 inch thickness using a meat mallet or rolling pin. This will help them cook evenly.

    Set up the breading station

    In three separate shallow bowls, place the flour in the first bowl, beaten eggs in the second bowl, and breadcrumbs mixed with salt and pepper in the third bowl.

    Bread the chicken

    Dredge each chicken breast in flour, shaking off the excess. Then dip it into the beaten eggs, allowing the excess to drip off, and finally coat it in the breadcrumb mixture, pressing gently to adhere.

    Pan-fry the schnitzels

    In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the breaded chicken breasts, cooking in batches if necessary to avoid overcrowding. Fry for about 3-4 minutes on each side or until golden brown and cooked through.

    Drain and serve

    Remove the schnitzels from the skillet and place them on a paper towel-lined plate to drain excess oil. Serve hot with lemon wedges and German pickles on the side.
