Pork Ribs Preparation

Season the Ribs
Preheat your oven to 300°F (150°C). Rub the ribs with salt, black pepper, garlic powder, and onion powder. Drizzle with olive oil.

Braised Cooking
Place the ribs in a large baking dish. Add apple cider vinegar and water to the bottom of the dish. Cover tightly with foil and bake for 2.5 to 3 hours, until tender.

Debone the Ribs
Once cooked, remove the ribs from the oven and let them cool slightly. Debone the ribs and cut the meat into bite-sized pieces.

Combine Ingredients
In a saucepan, combine ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.

Cook the Sauce
Bring the mixture to a simmer over medium heat. Reduce the heat and let it cook for about 15 minutes until thickened.

Glaze the Ribs
Toss the deboned rib meat in the BBQ sauce until well coated. Return to the oven for an additional 10 minutes to caramelize the glaze.

Prepare the Onions and Pickles
Shave the white onion thinly and prepare house-made pickles if not using store-bought.

Assemble the Sandwich
Layer the saucy rib meat on the bottom half of each sandwich bun. Top with shaved white onions and pickles, then cover with the top half of the bun.

Serve immediately with extra BBQ sauce on the side if desired.
