Preparation of Chicken

Marinate the Chicken
Cut the boneless chicken breasts into bite-sized chunks and place them in a bowl. Pour the buttermilk over the chicken and let it marinate for at least 1 hour in the refrigerator.

Prepare the Coating
In a separate bowl, mix together the flour, cornstarch, salt, black pepper, paprika, garlic powder, and onion powder.

Coat the Chicken
Remove the chicken from the buttermilk and let any excess drip off. Dredge the chicken pieces in the flour mixture until well coated.
Frying

Heat Oil
In a large pot or deep fryer, heat the oil to 180°C (350°F).

Fry the Chicken
Carefully add the coated chicken pieces to the hot oil in batches. Fry for about 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.
