    Prepare the Potatoes

    Preheat your oven to 375°F (190°C). Peel the potatoes and slice them thinly (about 1/8 inch thick) using a mandoline or sharp knife.

    Make the Cream Mixture

    In a saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute. Pour in the heavy cream, salt, black pepper, and fresh thyme. Bring to a simmer.

    Layer the Ingredients

    In a greased 9x13 inch baking dish, layer half of the sliced potatoes. Pour half of the cream mixture over the potatoes. Sprinkle with half of the cheddar and Parmesan cheeses. Repeat the layers with the remaining potatoes, cream mixture, and cheeses.

    Bake

    Cover the dish with aluminum foil and bake for 45 minutes. Remove the foil and sprinkle paprika on top. Bake for an additional 20-25 minutes, until the top is golden brown and the potatoes are tender.

    Let the au gratin potatoes sit for 10 minutes before serving. Enjoy as a family-style dish!
