Method

Prepare the Pork Loin

    Marinate the Pork

    In a bowl, mix olive oil, salt, black pepper, garlic powder, and chopped rosemary. Rub the mixture all over the pork loin and let it marinate for at least 30 minutes.

    Grill the Pork

    Preheat the grill to medium-high heat. Grill the pork loin for about 20-25 minutes, turning occasionally, until it reaches an internal temperature of 145°F (63°C). Let it rest for 10 minutes before slicing.

Prepare the Succotash

    Cook the Bacon

    In a skillet over medium heat, cook the VT bacon until crispy. Remove and chop into pieces, leaving the bacon fat in the skillet.

    Sauté the Vegetables

    Add onion and red bell pepper to the skillet with the bacon fat and sauté for 3-4 minutes until softened. Add corn and white beans, stirring to combine. Cook for an additional 5 minutes. Stir in chopped bacon and parsley before serving.

Grill the Zucchini

    Prepare Zucchini

    Slice the zucchini in half lengthwise and brush with olive oil. Season with salt and pepper.

    Grill Zucchini

    Place zucchini on the grill and cook for about 4-5 minutes on each side until tender and grill marks appear.

Make Salsa Rossa

    Blend Ingredients

    In a blender, combine tomatoes, garlic, onion, olive oil, basil, and salt. Blend until smooth, adjusting seasoning to taste.
