    Prepare the Corn

    Preheat your grill or grill pan over medium-high heat. Brush the corn with olive oil and season with salt and pepper. Grill the corn for about 10-15 minutes, turning occasionally until charred and cooked through. Remove from heat and let cool slightly.

    Make the Cucumber-Avocado Aioli

    In a blender or food processor, combine the cucumber, avocado, garlic, lime juice, and a pinch of salt. Blend until smooth. Adjust seasoning if needed.

    Prepare the Tortillas

    Warm the corn tortillas on the grill for about 30 seconds on each side until pliable.

    Assemble the Street Corn

    Cut the grilled corn off the cob and place it in a bowl. Add cotija cheese and chopped cilantro. Mix well. Spread a spoonful of the cucumber-avocado aioli on each tortilla, top with the corn mixture, and sprinkle with crushed Hot Cheetos.
