Prepare the Jalapeno-Lime Crema
In a small bowl, mix the sour cream, diced jalapeno, lime juice, salt, and pepper. Set aside.

Make the Curb Slaw
In a large bowl, combine the shredded cabbage, shredded carrot, lime juice, salt, and pepper. Toss well and set aside to marinate.

Sauté the Shrimp
In a large skillet, heat olive oil over medium-high heat. Add minced garlic and diced jalapeno, and sauté for about 1 minute until fragrant. Add the shrimp, season with salt and pepper, and cook for about 3-4 minutes until the shrimp turn pink and are cooked through.

Assemble the Tacos
Warm the flour tortillas in a dry skillet or microwave. Place a generous amount of the shrimp mixture on each tortilla, top with curb slaw, pico de gallo, crumbled cotija cheese, and a drizzle of jalapeno-lime crema. Garnish with chopped cilantro before serving.
