    Prepare the Bacon

    In a skillet over medium heat, cook the bacon until crispy. Remove from the skillet and let cool, then chop into small pieces. In the same skillet, add brown sugar and cook until it starts caramelizing. Add the chopped bacon back in and mix until coated. Set aside.

    Grill the Onions

    Slice the large onion and grill it over medium heat until caramelized and golden brown. This should take about 5-7 minutes. Remove from heat and set aside.

    Roast the Jalapeno

    Slice the jalapeno in half and remove seeds if desired. Grill or roast until the skin is blistered. Remove from heat and chop into small pieces.

    Cook the Burger Patties

    In a bowl, mix ground beef with salt and black pepper. Form into two burger patties. Grill or pan-fry the patties over medium-high heat for about 4-5 minutes per side, or until cooked to your desired doneness.

    Place each patty on a burger bun. Top with grilled onions, candied bacon, roasted jalapeno, queso blanco, and drizzle with house sriracha sauce. Garnish with chopped green onions.
