Burger Preparation

    Prepare the Candied Bacon

    Preheat your oven to 375°F (190°C). Lay bacon slices on a baking sheet and bake for 15 minutes. Remove from oven, sprinkle with brown sugar, and return to the oven for another 10 minutes until crispy.

    Make the Sriracha Mayo

    In a bowl, mix the mayonnaise and sriracha together until well combined. Set aside.

    Smoke the Huckleberries

    Place huckleberries in a smoker or on a grill with wood chips for about 20-30 minutes until they become soft and infused with smoke flavor.

    Prepare the Burger Patties

    In a large bowl, combine the ground beef, smoked huckleberries, salt, and black pepper. Form into 4 equal-sized patties.

    Cook the Burgers

    Heat olive oil in a skillet or grill over medium-high heat. Cook the patties for about 5-6 minutes on each side or until they reach your desired doneness.

    Assemble the Burger

    On the bottom half of each burger bun, place a burger patty, top with crumbled goat cheese, candied bacon, and a handful of arugula. Spread sriracha mayo on the top half of the bun and place it on top.

    Serve the smoked huckleberry burgers immediately with your favorite side dishes.
