    Gather all ingredients and ensure the smoked brisket is chopped into bite-sized pieces.

    On one half of each tortilla, layer the smoked brisket, cheddar-jack cheese, pico de gallo, and a drizzle of southwest ranch dressing. Fold the tortilla in half to create a quesadilla.
