    Cook the Macaroni

    In a large pot, bring salted water to a boil. Add elbow macaroni and cook until al dente, about 8-10 minutes. Drain and set aside.

    Make the Cheese Sauce

    In the same pot, melt butter over medium heat. Whisk in flour and cook for 1 minute. Slowly add milk, whisking continuously until the mixture thickens. Stir in cheddar and Monterey Jack cheese until melted and smooth. Season with salt, black pepper, and paprika.

    Combine Ingredients

    Add the cooked macaroni into the cheese sauce and mix until well combined. Fold in the smoked brisket gently.

    Prepare for Baking

    Preheat the oven to 350°F (175°C). Transfer the mac and cheese mixture to a greased baking dish. Top with breadcrumbs and drizzle with BBQ sauce.

    Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
