    Prepare the Avocados

    Cut the avocados in half, remove the pit, and scoop out the flesh. Cut the avocado flesh into thick slices.

    Make Tempura Batter

    In a mixing bowl, combine tempura batter mix and ice water. Whisk until smooth and the batter is well combined.

    Fry the Avocados

    Heat oil in a deep skillet. Dip the avocado slices into the tempura batter, then carefully place them in the hot oil. Fry until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.

    Prepare the Salsa

    In a bowl, combine black beans, roasted corn, pickled red onion (sliced thin), and half of the chopped cilantro. Season with salt and pepper to taste. Mix well.

    Make Cilantro-Lime Ranch

    In a bowl, mix ranch dressing with lime juice and the remaining chopped cilantro. Adjust seasoning with salt and pepper.

    Assemble the Dish

    Warm the corn tortillas on a skillet. Place a few slices of tempura-fried avocado on each tortilla, top with black bean and corn salsa, crumbled cotija cheese, and drizzle with cilantro-lime ranch. Garnish with additional cilantro if desired.
