Method

French Toast Preparation

  1. 1

    Prepare the Custard

In a mixing bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and nutmeg until well combined.

  2. 2

    Soak the Bread

Dip each slice of sourdough bread into the custard mixture, making sure both sides are well coated. Let them soak for a few seconds.

  3. 3

    Cook the French Toast

Heat a skillet over medium heat and add a bit of butter. Cook the soaked bread slices for about 3-4 minutes on each side until golden brown and crispy.

Berry Compote and Chantilly Cream

  1. 4

    Make the Berry Compote

In a small saucepan, combine the mixed berries and sugar. Cook over medium heat until the berries break down and the mixture thickens, about 5-7 minutes.

  2. 5

    Prepare the Chantilly Cream

In a mixing bowl, whip the heavy cream and powdered sugar together until soft peaks form.

Assembly

  1. 6

    Assemble the French Toast

Place the cooked French toast on a plate. Spread the macadamia nut peanut butter on top, add sliced banana, and spoon the berry compote over. Finish with a dollop of chantilly cream.
