Making Spruce Tip Syrup

    Prepare the Syrup

    In a saucepan, combine the spruce tips, sugar, and water. Bring to a boil over medium heat, stirring until the sugar dissolves. Reduce heat and let it simmer for 15 minutes. Remove from heat and let it cool. Strain out the spruce tips and store the syrup in a bottle in the refrigerator.

Making the Spruce Juice Cocktail

    Mix the Cocktail

    In a cocktail shaker, combine the spruce tip syrup, Stag's Hollow verjus, and lemon oil. Add ice and shake well until chilled. Strain into a glass filled with ice and top with soda water. Stir gently to combine.
