Omelette Preparation

    Prepare the Ingredients

    Crack the eggs into a bowl, add salt, and whisk until frothy. Prepare the Dungeness crab by picking through it to ensure there are no shells. Grate the aged cheddar and chop the chives.

    Cook the Omelette

    In a non-stick skillet, heat a little oil or butter over medium heat. Pour in the whisked eggs and let them sit for a few moments before gently stirring. Once the eggs start to set, add the crab meat, cheddar, and chives. Cook until the eggs are fully set, then fold the omelette in half and slide it onto a plate.

Hollandaise Sauce Preparation

    Make the Hollandaise Sauce

    In a heatproof bowl, whisk the egg yolks with lemon juice until pale. Melt the butter and, while whisking continuously, slowly drizzle it into the yolk mixture until the sauce thickens. Stir in paprika and season with salt to taste.
