For the Roasted Scallops

    Prepare the Scallops

    Preheat the oven to 400°F (200°C). Pat the scallops dry with paper towels. In a bowl, toss the scallops with olive oil, salt, and black pepper.

    Roast the Scallops

    Arrange the scallops on a baking sheet in a single layer. Roast in the preheated oven for 8-10 minutes, or until the scallops are opaque and cooked through.

For the Tempura Cauliflower

    Prepare the Battering Mixture

    In a bowl, mix together all-purpose flour, cornstarch, baking powder, and salt. Gradually add cold water until a smooth batter forms.

    Fry the Cauliflower

    Heat vegetable oil in a deep frying pan over medium-high heat. Dip cauliflower florets into the batter, then carefully place them in the hot oil. Fry until golden brown, about 3-4 minutes. Drain on paper towels.

    In a small saucepan, combine fermented black beans, minced garlic, minced ginger, soy sauce, sesame oil, and water. Cook over low heat for about 5 minutes, stirring occasionally.
