Prepare the Rosti

Grate the Potatoes
Peel and grate the russet potatoes. Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture.

Mix and Season
In a large bowl, combine the grated potatoes with salt and black pepper. Mix well.

Cook the Rosti
Heat half the duck fat in a large skillet over medium heat. Add the potato mixture, forming it into a flat cake. Cook for 10-15 minutes until golden brown and crispy on one side.

Flip and Finish Cooking
Add the remaining duck fat, carefully flip the rosti, and cook for another 10-15 minutes until the other side is also golden brown.
Prepare the Ranch Dressing

Combine Ingredients
In a bowl, mix together mayonnaise, sour cream, buttermilk, dried dill, garlic powder, onion powder, salt, and black pepper until smooth.

Refrigerate
Cover and refrigerate the ranch dressing for at least 30 minutes to allow the flavors to meld.
Serve

Plate the Rosti
Cut the rosti into wedges and plate it.

Add Dressing and Garnish
Drizzle the ranch dressing over the rosti and garnish with freshly chopped chives. Serve warm.
