Prepare the Shallot Marmalade

    Cook the Shallots

    Thinly slice the shallots and sauté them in a pan over medium heat with a bit of oil until they become soft and translucent.

    Sweeten the Shallots

    Add sugar and balsamic vinegar, cooking until the mixture thickens and becomes jam-like.

Prepare the Sauce

    Mix the Ingredients

    In a bowl, combine mayonnaise, ketchup, Dijon mustard, Worcestershire sauce, smoked paprika, and garlic powder. Mix until smooth.

Form the Patties

    Shape the Beef

    Form the dry aged beef into four equal-sized patties. Season each side with salt and black pepper.

Cook the Burgers

    Grill the Patties

    Preheat the grill or skillet. Cook the patties for about 4-5 minutes on each side, or until desired doneness is reached. Add cheddar slices on top during the last minute of cooking to melt.

Assemble the Burger

    Build the Burger

    Toast the potato buns on the grill. Spread TCR burger sauce on the bottom bun, add lettuce, the cooked patty with melted cheddar, shallot marmalade, and sumac pickles. Top with the other half of the bun.

Serve

    Serve the burger with hand-cut fries or a side of greens.
