Prepare the Chicken
Preheat your oven to 400°F (200°C). Set up a breading station with three shallow dishes: one for the flour mixed with salt and pepper, one for the beaten eggs, and one for the breadcrumbs mixed with grated Parmesan.

Dredge each chicken breast in the flour, shaking off the excess. Dip into the beaten eggs, then coat with the breadcrumb mixture, ensuring an even layer.

Heat a skillet over medium heat with oil. Once hot, add the breaded chicken breasts and cook for 3-4 minutes on each side until golden brown. Transfer to a baking sheet and bake in the preheated oven for another 10-15 minutes or until cooked through.

While the chicken is baking, cut the ciabatta rolls in half. Spread a generous amount of kosho aioli on the bottom half of each roll. Layer the lettuce, then place the crispy chicken on top.

Top the chicken with mushroom conserva, pickled onion, and a spoonful of tomato jam. Close the sandwich with the top half of the ciabatta roll.
