Preparation of the Pickles

Prepare the Pickles
In a bowl, combine sliced cucumbers, white vinegar, water, sugar, salt, and sumac. Mix well and let it sit in the refrigerator for at least 1 hour.

Make the Slaw
In a mixing bowl, combine shredded cabbage, carrots, mayonnaise, apple cider vinegar, salt, and pepper. Toss well and refrigerate until ready to serve.
Cooking the Chicken

Fry the Chicken
In a large bowl, marinate chicken pieces in buttermilk for at least 1 hour. In another bowl, mix flour, cornstarch, paprika, garlic powder, onion powder, salt, and pepper. Heat oil in a deep pan. Dredge marinated chicken in the flour mixture and fry until golden brown and cooked through, about 15-20 minutes. Drain on paper towels.

Prepare the Gravy
In a saucepan, melt butter over medium heat. Whisk in flour until light brown. Gradually add chicken broth while whisking to avoid lumps. Stir in maple syrup, fermented chili paste, salt, and pepper. Simmer until thickened.

Assemble the Dish
Serve fried chicken on top of waffles, drizzle with fermented chili maple gravy, and garnish with slaw and sumac pickles.
