Method

Preparation of Onion & Tomato Jam

  1. 1

    Cook the Jam

Heat olive oil in a pan over medium heat. Chop the onion and add it to the pan, cooking until translucent. Add chopped tomatoes, sugar, salt, and pepper. Simmer until thickened, about 15 minutes.

Assembly of Sandwich

  1. 2

    Cook the Bacon and Egg

In the same pan, cook bacon until crispy. Remove and set aside. Use the bacon drippings to fry the egg over medium heat until the white is set but the yolk is still runny.

  2. 3

    Assemble the Sandwich

Slice the ciabatta in half and toast it. Spread the onion & tomato jam on the bottom half, add the lettuce, avocado slices, bacon, cheddar cheese, and the cooked egg. Top with the other half of the ciabatta.

Serving

  1. 4

    Serve with Side

Serve the breakfast sandwich with a side of hashbrowns or mixed greens.
