Add the capers, Dijon mustard, olive oil, salt, and black pepper to the diced beef. Mix well to combine.

Grate the Pecorino cheese and fold it into the beef mixture.

Peel the turnip and cut it into thin slices or matchsticks.

In a small bowl, mix the elderflower vinegar with a pinch of salt and add the turnip slices to marinate for about 10 minutes.
