Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a saucepan and bring to a boil. Once boiling, reduce the heat to low, cover, and cook for 15 minutes. Remove from heat and let it sit, covered, for another 10 minutes.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

Prepare the Amberjack
Dice the amberjack fillet into small bite-sized pieces. Season with chili flakes and yuzu juice. Set aside.

Form Rice Bites
Wet your hands with water to prevent sticking. Take a small amount of sushi rice and flatten it in your palm. Place a piece of seasoned amberjack in the center, then mold the rice around it to form a bite-sized ball or rectangle. Repeat until all the rice and amberjack are used.

Coat and Fry
In a shallow bowl, mix panko breadcrumbs and sesame seeds. Dip each rice bite into the breadcrumb mixture, pressing gently to adhere. Heat vegetable oil in a deep pan over medium heat. Fry the rice bites in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.

Serve
Drizzle kewpie mayo over the crispy amberjack bites and garnish with chopped green onions. Serve immediately with extra yuzu juice on the side.
