    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips to resemble fries.

    Soak the Fries

    Soak the cut fries in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Season the Fries

    In a large bowl, toss the dried fries with olive oil, garlic powder, salt, and black pepper until evenly coated.

    Bake the Fries

    Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.

    Add Truffle Oil and Parmesan

    Once the fries are done, remove them from the oven and drizzle with truffle oil. Sprinkle with grated Parmesan cheese and chopped parsley.

    Serve the truffle fries hot, garnished with additional Parmesan if desired.
