    Prepare the crust

    Preheat the oven to 350°F (175°C). In a bowl, combine graham cracker crumbs and melted butter. Mix until combined. Press mixture firmly into the bottom of a 9-inch springform pan to form the crust.

    Make the cheesecake batter

    In a large mixing bowl, beat the cream cheese until smooth. Gradually add sugar and mix until well combined. Add sour cream and vanilla extract, mixing until smooth. Add eggs one at a time, mixing on low speed until just combined.

    Bake the cheesecake

    Pour the cheesecake batter over the crust in the springform pan. Bake in the preheated oven for 55-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.

    Chill the cheesecake

    Remove the cheesecake from the oven and let it cool to room temperature. Cover and refrigerate for at least 4 hours, preferably overnight.

    Prepare the strawberries

    In a bowl, toss the fresh strawberries with 2 tablespoons of sugar. Let them sit for about 30 minutes to release their juices.

    Once chilled, remove the cheesecake from the springform pan, top with the sugared strawberries, and slice to serve.
