Prepare the Filling

    Chop the Vegetables

    Julienne the carrot, cucumber, and red bell pepper. Shred the red cabbage and chop the fresh cilantro and mint leaves. Tear the lettuce leaves into pieces.

    Mix the Filling

    In a large bowl, combine the chopped vegetables: carrot, cucumber, red bell pepper, red cabbage, cilantro, mint, and lettuce. Toss gently to mix them evenly.

Assemble the Spring Rolls

    Soak the Rice Paper

    Fill a shallow dish with warm water. Submerge one rice paper wrapper in the water for about 10-15 seconds or until it becomes pliable.

    Add Filling

    Place the soaked wrapper on a clean surface. Add a small amount of the vegetable filling in the center of the wrapper.

    Roll the Wrapper

    Fold the sides of the wrapper over the filling, then roll it away from you tightly to enclose the filling. Repeat this process with the remaining wrappers and filling.

Make the Dipping Sauce

    Combine Ingredients

    In a small bowl, mix together the peanut butter, soy sauce, honey (or maple syrup), rice vinegar, and water until smooth.

    Add Sesame Seeds

    Sprinkle sesame seeds into the sauce and stir well to combine.

Serve

    Plate the Spring Rolls

    Arrange the spring rolls on a serving platter and serve with the dipping sauce on the side.
