In a large bowl, combine the peeled and deveined shrimp with salt and black pepper. Toss to coat evenly and set aside.

Prepare three shallow dishes: one with all-purpose flour, one with beaten eggs, and one with a mixture of shredded coconut and panko breadcrumbs.

Dip each shrimp first into the flour, shaking off the excess, then into the beaten eggs, and finally into the coconut-panko mixture, pressing slightly to adhere.

In a small bowl, whisk together the mayonnaise, sweet chili sauce, lime juice, and minced garlic until smooth. Refrigerate until ready to serve.

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Carefully add the breaded shrimp in batches, frying for about 2-3 minutes per side or until golden brown. Remove with a slotted spoon and drain on paper towels.
