Preparation

Soak Rice Noodles
Soak the rice noodles in warm water for about 30 minutes or until they are softened. Drain and set aside.

Prepare Sauce
In a small bowl, mix together the fish sauce, tamarind paste, brown sugar, soy sauce, and lime juice. Stir until the sugar is dissolved and set aside.
Cooking

Cook Tofu
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the cubed tofu and sauté until golden brown on all sides, about 5-7 minutes. Remove and set aside.

Cook Shrimp
In the same skillet, add another tablespoon of oil. Add the shrimp and cook until they turn pink and opaque, about 3-4 minutes. Remove and set aside.

Stir-Fry Vegetables
Add the remaining tablespoon of oil to the skillet. Add the carrot and cook for 2 minutes. Then add the bean sprouts and green onions, stirring constantly for another 2 minutes.

Combine All Ingredients
Add the soaked rice noodles to the skillet along with the sauce mixture. Toss everything together for about 3-4 minutes until the noodles are heated through and evenly coated.

Add Proteins
Return the cooked tofu and shrimp to the skillet. Gently toss everything to combine and heat through, about 2 minutes.
Serving

Garnish and Serve
Transfer the Pad Thai to serving plates. Top with crushed peanuts and chopped cilantro. Serve with lime wedges on the side.
