Cheesecake Filling

    Prepare the Crust

    Preheat the oven to 350°F (175°C). In a medium bowl, mix together the graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from oven and let cool.

    In a large bowl, beat the cream cheese until smooth. Gradually add the granulated sugar, and beat until fully combined. Add the sour cream, vanilla extract, and eggs, one at a time, mixing well after each addition until the mixture is creamy and smooth.

    Pour the cream cheese mixture over the cooled crust. Bake in the preheated oven for 50-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour.

    Remove the cheesecake from the oven and allow it to cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight.
